All the forms of Bottle Gourd - Lauki

Hello friends, let's experiment with white bottle gourd ie Lauki today.

There are lots of recipes that can be made with Lauki like vegetables, sweets, soups, snacks, rice and parathas. When it comes to kids, they normally don't like this vegetable so I try to hide it in others and give.

1. Lauki parathas - There are two ways we can make this - like a potato stuffing or mixing it directly in flour like  thepla

Stuffed Lauki paratha
Preparation time - 15 min, cooking time - 10 min
Ingredients  for one serving

1/2 cup of whole wheat flour, salt to taste - mix it with little water and make soft dough
For stuffing - 3/4 cup grated bottle gourd, bit of onion, 1/4 tbs chilli powder, 1/4 tbs salt, 1/2 tbs chopped coriander, 1/4 tbs dry mango powder - put 1 tbs of oil in a pan then add onion and powders and bottle gourd, roast for few minutes till tender. Set aside and let it cool.
Roll the dough into a circle (chapati) then add a small ball of stuffing in it and roll it again the the form of paratha. Apply oil while cooking and serve with chutney or curd.

Lauki Thapela - it's also called as dudhi in Gujarat and like methi Thapela , Lauki thepla is also widely eaten. For the kids I normally add a bit of besan or jowar(sorghum) flours but that's optional.
Ingeridents - Lauki , salt to taste, 1 tbs ginger chilli paste, 1/2 tbs coriander powder, 1/2 tbs turmeric powder, 1/2 tbs cumin powder, 3 tbs curd , water and wheat flour
Steps - grate Lauki one cup and mix all the masalas in it and keep aside for some time then mix whole wheat flour and 1/2 cup of jowar or 2-3tbs of besan if you like plus curd and water to make a dough of it. The dough should be soft then make medium size balls and roll it into chapati form. Sprinkle some wheat flour while rolling if required. Roll to about 6 inches in diameter. Place it on hot Tawa. After a few min flip it and put the other side on. Add oil on the side and then flip and press a bit. Do this on both sides and then your thepla is ready to be served with curd or Aaloo gravy.

Lauki halwa - Grated one cup of  Lauki, 3 cups of full cream milk, 1 cup milkmaid, almonds to sprinkle and sugar if required for taste.
Add 2 tbs of ghee in a pan and add Lauki to it. Fry for 3-4 minutes then add milk to it. Let it boil for 10 min stirring in between so that Lauki does not burn. Once milk thinkens add milkmaid and sugar. Mix and boil for few more minutes till the required consistency you like. I like it a bit soft and liquid form but my son likes it dry. Sprinkle almonds on top of it and server hot or cold from fridge.

Mix grated Lauki in rice so that's kids can eat in the form of veg rice Or mix in soups. In vegetable cutlets. Simple way - mash one boiled potato and salt to taste and some paneer and grated Lauki also to it. Make cutlets of it and serve to kids.
